Whole spelt banana bread (vegan, additional sugar free)

In the meantime I have tried a lot of banana bread recipes and at the end I have ended up writing my own recipe because I didn’t find the perfect one. I have tweaked the ingredients until I found we found it perfect for us. This banana bread is very moist and sweet thanks to overripe bananas and with enough bite to it due to the almonds and whole spelt flour. It is vegan (plant based) and contains no additional sugar. It is also fast and easy to prepare.

A healthy cake

With this recipe I wanted to bake a banana bread, which one can eat without regrets. Therefore I decided to use whole spelt flour and glounr almonds with skin on them. Additionally I decided to omit any additional sugar. It is sweet enough thanks to the overripe bananas.

Perfect for leftover bananas

As soon as I have 3-4 bananas which start to get overripe I already prepare the recipe for this banana bread and bake it as soon as possible. To serve it you can drip a bit of maple sirup and place some walnuts on the top. My kids love to help to bake it and also to eat it!

Whole spelt flour, almonds and bananas are a real powerhouse. This cake is vegan and doesn't contain any additional sugar, so it is perfekt for the kids and also for the not so small in the house!

Ingredients

  • 500 g bananas
  • 200 g milk almond milk, oat milk, coconut milk...
  • 250 g whole spelt flour
  • 100 g almonds ground, with the skin
  • 16 g baking powder
  • 1/2 vanilla bean the core of it

Instructions

Prepare the dough

  • Peel the bananas, chop and mash.
  • Add milk and mix well. If you do not like to have any banana pieces in your bread puree everything with a mixer.
  • Add all dry ingredients in a bowl (flour, almonds, baking powder and vanilla) and mix well.
  • Preheat the oven at 160°C with the fan on and grease a round baking tin (26cm diameter).
  • Mix the dry and wet ingredients and place in the baking tin. Smooth the top.

Bake

  • The baking time is 45 minutes. Make sure a toothpick inserted in the middle comes out clean before removing from the oven.
  • Then let cool 5 minutes in the baking tin, remove it and let cool completely.
