Vanilla crescent cookies (vegan, additional sugar free)

Vanilla crescent cookies are typical in Germany. They should have a subtil vanilla taste, be tender and melt in the mouth. These ones fulfill all the requirements and are only sweetened with dates!

Why I like to sweeten with dates

Dates are full of nutrients, fiber and antioxidants, which have numerous health benefits and can even protect from developing some illnesses. The digestion gets boosted thanks to the high amount of fiber and the dates upport the bowel movements. Therefore I prefer to use dates whenever possible.

Vanilla crescent cookies (vegan, additional sugar free)

Vanilla crescent cookies are typical in Germany. They should have a subtil vanilla taste, be tender and melt in the mouth. These ones fulfill all the requirements and are only sweetened with dates!

Ergibt: 60 cookies

Ingredients

  • 100 g almonds ground, without skin
  • 275 g white spelt flour
  • 90 g date paste
  • 180 g butter or margarine cold

Instructions

Prepare dough

  • Knead all ingredients together.
  • Place the dough covered 2 hours in the fridge.

Shape & bake

  • Preheat the oven to 180°C fan on.
  • Make 2 rolls out of the dough. Cut small pieces and shape to crescents. Place on a baking pan covered with a baking paper.
  • Bake the cookies 10-12 minutes.

Notes

For the date paste take the amount of date paste stated in the recipe and place 20 minutes in a bowl with some warm water. Remove the water and mix the dates until finely pureed. You can also prepare a bigger amount of date paste at once and leave it in the fridge to sweeten other dishes. It is also delicious mixed with some cacao powder as a chocolate spread.
