Hazelnut and cinnamon roll cookies (vegan, additional sugar free)

These roll cookies are made of buckwheat and whole spelt flour and are sweetened only with dates. The filling is made of ground hazelnuts and cinnamon gives it the final touch. They are very aromatic and an absolute eye-catcher in every cookie box!

Buckwheat flour

It is not easy to work with buckwheat flour. If the dough breaks at any part, press it together until it holds together again. It is very helpful that the dough stays cold.

Why I like to sweeten with dates

Dates are full of nutrients, fiber and antioxidants, which have numerous health benefits and can even protect from developing some illnesses. The digestion gets boosted thanks to the high amount of fiber and the dates upport the bowel movements. Therefore I prefer to use dates whenever possible.

Ingredients

Dough

  • 180 g buckwheat flour
  • 70 g whole spelt flour
  • 140 g butter or margarine
  • 50 g date paste* *self made, please see notes
  • 2 tsp baking powder
  • 1 pinch salt

Filling

  • 70 g butter or margarine
  • 50 g date paste* *self made, please see notes
  • 50 g hazelnuts ground
  • 2-3 Tbsp cinnamon ground

Instructions

Prepare dough

  • Mix all ingredients until you have a uniform mixed dough.
  • Let rest in the fridge 1-2 hours covered.

Prepare filling

  • For the filling warm the butter a little bit (do not melt it).
  • Add the other ingredients and mix well.

Spread filling on the dough

  • Roll the cold dough on a lightly floured surface until it has the size of 30 x 40 cm. Place on a baking paper.
  • Spread the filling on top of the dough and roll over the long side with the help of the baking paper.
  • Cover the roll with cling film and freeze 2-3 hours.

Bake

  • Preheat the oven to 180°C with the fan on.
  • Cut the frozen roll (remove cling film first) in thin slices and place on a baking paper.
  • Bake in the preheated oven 10-12 minutes.

Date paste
For the date paste take the amount of date paste stated in the recipe and place 20 minutes in a bowl with some warm water. Remove the water and mix the dates until finely pureed. You can also prepare a bigger amount of date paste at once and leave it in the fridge to sweeten other dishes. It is also delicious mixed with some cacao powder as a chocolate spread.
